Jamonisimo is arguably the BEST jamon in the world.  Jamón (pronounced hamon) is the Spanish word for ham and it's produced by a dry curing process.  It is usually cured longer than prosciutto.   There are two main types of jamon.  

Jamon Serrano - ham from the sierra mountains
Jamon Iberica - ham from the Black Iberian Pig













Racks and racks of cured ham are hung, left out to dry as part of the curing process.  



The cutting of a piece of the Jamon is a ritual and it must be done properly.  It's an art.






We ran here from the train station and managed to make it before they close!  Even though they were closed, they still entertained us and let us perform a jamon tasting.  We were seated in the back of the store for a jamon tasting - the different types of jamon with their own characteristics.






We ordered several platters of jamon.  There were all incredible and had their own distinct personalities.

The shop also has vacuum packed packages of all of their offerings so we got to take this on our flight to enjoy.
