There was actually a miscommunication with the concierge at MGM. Instead of going to try the one and only joel robuchon, we settled for l'atelier and its seasonal discovery9 course tasting menu.
The resturant itself has an open kitchen settings where it allowed diners to view its preparation process. We were seated at the bar.
If you look closely on the left (in the above picture), a leg was displayed and rested vertically on a silver holder for jamon iberico! As we dined through the night, we can see how they meticulously hand-sliced each piece with a dangerously sharp knife. The pieces were cut at the perfect thickenss and marbled with a balanced amount of fat. Unfortunately, the jamon iberico was not part of our tasting menu.
1) L'amuse-bouche: avocado and cilantro flavored grapefruit gelee
2) Le crabe royal: king crab on a turnip disc with a sweet and sour sauce
3) Les huîtres: poached baby kussi oysters with french echire butter
4) La cebette: white onion tart with smoked bacon and asparagus
5) Le foie gras: foie gras and langoustine parfait with daikon
(after gobbling up the foam)
6) La sole: dover sole filet, baby leek with ginger
7) La hampe: french-style hanger steak with fried shallots
8) La fraise: fresh strawberry variation and aloe granite
9) Le citron: light lemon parfait, caramilized ganache and blueberry ice cream
